This is a simple dessert recipe , firstly because all the ingredients are easily available and secondly because the preparation takes hardly 10 to 15 mins. By the way let me tell you, the name is very misguiding as there’s no marshmallow at all in this pudding, the name is only a representation of the colour and texture of the pudding. For the fruit sauce I’ve chosen mango but if you wish, you may use any other fruit but preferably one with a bright colour to go with the white pudding.

For Pudding:

  • Egg White – of 4 eggs
  • Gelatin – 11/2 tbsp
  • Cold Water – 1/2 cup
  • Boiling Water – 1/2 cup
  • Sugar – 1 cup (powdered)
  • Vanilla Essence – 1 tsp

For Fruit Sauce:

  • Fresh mango juice – 1 cup
  • Sugar – 4 tbsp
  • Salt – a pinch
  • Corn flour – 1 1/2 tsp

Pudding: Soak the gelatin in cold water. Beat the egg whites in a large bowl using an egg beater till it becomes fluffy. Add 1/2 cup boiling water to the soaked gelatin and stir well till it has completely dissolved. Then add this to the beaten egg whites. Also add in the vanilla essence and powdered sugar and continue beating till all the ingredients have been incorporated. Transfer the contents of the bowl to a pudding tray and place it in the refrigerator for 1/2 to 1 hr to set.

Fruit Sauce: Mix the mango juice, salt and sugar in a saucepan and cook on low flame. Stir continuously to avoid the sauce from sticking to sides and bottom of the pan. Dissolve the cornflour in 1/2 cup water and add it to the saucepan. Continue stirring till the sauce becomes thick. Remove the pan from the heat and set aside to cool.

Serve the Marshmallow pudding drizzled with the mango sauce.
